You can pull off this turkey taco soup mostly with pantry ingredients in 30 minutes. All canned and frozen ingredients are already cooked.

Just brown some turkey, throw everything in a pot and let “everyone marry each other”. Perfect for busy weeknights!

Or plan ahead and let this ground turkey soup cook itself in a slow cooker while you are gone.

Whatever method you choose, I’m sure your family will love this healthy taco soup. Everyone loves good old taco soup. Just like everyone loves a warm bowl of healthy chili. Am I right?!

Ingredients You Will Need

To make turkey chili taco soup, you will need mostly pantry and freezer ingredients.

I always keep ground turkey and a huge bag of organic corn from Costco in the freezer. As well as canned organic tomato sauce in the pantry. Just because it’s healthy and affordable, not because I am a snob.

Then simple spices like taco seasoning, onion powder, salt and pepper. You can use fresh onion but I really like to have taco soup on the dinner table quick.

I cook and freeze organic dried beans in batches, and I highly recommend you learn how to cook dried beans. You will save a lot of money vs. buying organic BPA free canned beans. I now do it in my Instant Pot though, ha.

Can I Use Ground Beef or Chicken?

Yes. Keep in mind ground chicken will be healthier choice. Poultry is lean and low fat compared to red meats like ground beef and ground pork.

You can use ground beef. I use it on occasion as it contains 15 times more saturated fat.

What Beans I Can Use?

I feel like red kidney beans are a must for tacos soup. Then you can add romano, white or navy and even black beans. Depends what you have on hand but at least one can of red kidney beans is recommended.

How to Make Turkey Chili Taco Soup

  1. In a Dutch oven or heavy bottom pot, brown ground turkey for 5 – 7 minutes.
  2. Add taco seasoning and cook for 1 more minute. Heat makes spices more flavorful.
  3. Add everything else: tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water.
  4. Simmer for 20-60 minutes. Longer – deeper flavours but overall soup is ready fast.

For slow cooker taco soup, do the same and cook on Low for 7 – 8 hours or on High for 3 – 4 hours.

You can also make taco soup with leftover shredded chicken or omit meat for a vegetarian soup.

My kids love Mexican food (I think most kids do). So I kept taco soup mild, just with a bit of a bite that they can handle. Add more heat to taste if you wish.

Toppings and Fixings

For turkey taco soup toppings, use what you have. Fixings are the same as for chili. Here are the toppings we like:

  • Organic tortilla chips
  • Greek yogurt or regular 3.5% plain yogurt
  • Shredded cheese like Tex Mex, Colby Jack etc.
  • Green onion and cilantro
  • Diced avocado
  • Chopped red onion
  • Limes to squeeze over the chilli
  • Canned diced green chiles

Does Ground Turkey Soup Freeze Well?

Yes.

Does chili soup ever freeze well. Because it is hearty, you can freeze leftovers for up to 3 months. Just make sure to cool soup and place in airtight containers to avoid the freezer burn.

And also taco soup is amazing party food. Bring to a potluck in slow cooker or Instant Pot and keep on warm. Make taco soup bar with all the toppings, pour yourself a glass of wine and watch everyone eat.

Ingredients

  • 2 lbs ground turkey
  • 3 x 15 oz cans tomato sauce, low sodium
  • 2 x 15 oz cans low sodium red kidney or romano beans, drained & rinsed
  • 3 cups corn, frozen or canned (drained)
  • 2 tbsp taco seasoning
  • 2 tbsp onion powder or flakes
  • 1 tbsp maple syrup or honey
  • 1 tsp salt
  • Ground black pepper, to taste
  • 4 cups water or low sodium broth
  • Oil, for frying
  • 1 small bunch cilantro, finely chopped
  • Greek yogurt and tortilla chips, for serving

Instructions

  1. Stovetop Method: Preheat large dutch oven or heavy bottom pot on medium – high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 – 7 minutes, stirring occasionally and breaking into pieces. Add taco seasoning and cook for 1 more minute, stirring frequently.
  2. Add tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir. Cover, bring to a boil, reduce heat to low and simmer for 20-60 minutes (longer – deeper flavours but overall soup is ready fast).
  3. Add cilantro and stir; serve hot with tortilla chips and Greek yogurt (if desired).
  4. Slow Cooker Method: Preheat large ceramic non-stick skillet on medium – high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 – 7 minutes, stirring occasionally and breaking into pieces. Add taco seasoning and cook for 1 more minute, stirring frequently.
  5. Transfer to a large slow cooker along with tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir. Cover and cook on Low for 7 – 8 hours or on High for 3 – 4 hours.
  6. Add cilantro and stir; serve hot with tortilla chips and Greek yogurt (if desired).

Store: Refrigerate in an airtight container for up to 5 days.

Freeze: Fully cook, cool completely and freeze in an airtight container for up to 3 months. Thaw on a stovetop covered on low.

Make Ahead (Slow Cooker) for Freezer: In a large Ziploc bag, add cooked ground turkey (let it cool first) along with all ingredients (except water, cilantro and garnishes). Let air as much as possible, seal and freeze for up to 3 months. Thaw in the fridge overnight, add to slow cooker along with water, and cook as per further instructions + 1 hour.

Notes

*You might need to use less salt if using regular (not low sodium) tomato sauce.
