Buddha Bowl
- Ingredients: 1 cup cooked quinoa, 1/2 cup roasted chickpeas, 1/2 cup diced cucumber, 1/2 cup shredded carrots, 1/2 cup hummus, 1 tbsp tahini, lemon juice, parsley.
- Instructions: Assemble ingredients in a bowl. Drizzle with tahini and lemon juice, garnish with parsley.
