Quinoa and Black Bean Salad
- Ingredients: 1 cup cooked quinoa, 1 can black beans (rinsed), 1 diced red bell pepper, 1/2 cup chopped cilantro, 1 diced avocado, juice of 1 lime, 1 tbsp olive oil, salt, and pepper.
