Chickpea and Spinach Curry
- Ingredients: 1 can chickpeas (rinsed), 2 cups spinach, 1 can diced tomatoes, 1 diced onion, 2 cloves garlic, 1 tbsp curry powder, 1 tsp cumin, 1/2 cup coconut milk.
- Instructions: Sauté onion, garlic, add spices, tomatoes, chickpeas, and spinach. Add coconut milk and simmer.
